The decaffeination process

Swisswater® System

The Swiss Water® process begins by infusing high-quality green coffee beans in pure, clean water to create what we call “green coffee extract,” or GCE. The GCE is then passed through charcoal filtration, which traps only the caffeine molecules in the pores of the charcoal

Next, GCE, now decaffeinated, is circulated on each batch of green coffee beans. The caffeine, not the flavor components, is removed through charcoal filters that are quickly regenerated. Because the GCE is already saturated with all the soluble solids that give coffees their unique flavors and characteristics, any possible flavor changes that might occur are limited to the absolute minimum. This is why the Swiss Water® Process maintains the flavor and complexity of the coffee so accurately, without adding extraneous “process” flavors or chemical residues to the coffee as most other processes do.

The Swiss Water® Process is coupled with scientific systems and advanced controls to identify the relevant variables that adapt and adjust for different types of coffee. Where temperature needs to be adjusted, it is carefully adjusted. Swiss Water® engineers use constant data feedback on process performance to optimize each step and the overall result.

The idea of a chemical-free decaffeination process, environmentally friendly and using only water, was first introduced in Schaffhausen, Switzerland, in the 1930s.

SwissWater Decaffeinated Coffee Inc., named after the birthplace of water-processed decaffeination, is now based in Delta, British Columbia. To this day, glacial runoff from British Columbia’s Coast Mountains provides the fresh water used to decaffeinate coffee using the Swiss Water® Process.
